You are doing a wonderful job! While you have the chainplates out consider having them electropolished. It involves a bath with some electricity, removes all the rust and passivates the surface so that it remaines bright for a very long time. It is not expensive. Most stainless steel fabricators have the equoment. Stanchions, pulpits and most stainless hardware is treated like that.
